Description
This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor and comes together in under 30 minutes. It’s the perfect weeknight meal solution.
Ingredients
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/4 cup fresh basil leaves, torn or chopped
- Optional: pinch of red pepper flakes
- Optional: 1 tbsp tomato paste
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes until fragrant and lightly golden.
- Add cherry tomatoes to the skillet. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes, until most tomatoes have burst.
- Use the back of a spoon or a potato masher to gently mash some of the remaining whole tomatoes. Reduce heat to medium-low and simmer for 5-7 minutes, allowing flavors to meld.
- Season generously with salt and black pepper. Stir in fresh basil leaves just before serving.
