Ingredients
- 1.5 lbs (approx. 4 cups) cherry or grape tomatoes
- 3 tablespoons extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (or to taste)
- 1/2 cup fresh basil leaves, chopped or torn
- Salt and freshly ground black pepper to taste
- Optional: 1/2 tsp sugar or 1 tsp balsamic vinegar
Instructions
- 1. Prep Tomatoes & Aromatics: Wash tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
- 3. Cook Tomatoes: Add whole cherry tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes until tomatoes burst. Gently mash some with a spoon.
- 4. Simmer & Adjust: Reduce heat to low and simmer for 5-7 minutes. Taste and adjust seasonings (salt, pepper, optional sugar/balsamic).
- 5. Finish & Serve: Remove from heat, stir in fresh basil. Serve immediately over spaghetti.
