Ingredients
- 2 pints (about 4 cups) cherry tomatoes, halved
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon balsamic vinegar
- 1/2 cup fresh basil leaves, torn or chopped
- 1/2 teaspoon dried oregano (optional, or a sprig of fresh)
- Salt and freshly ground black pepper to taste
- Optional: pinch of red pepper flakes
Instructions
- 1. Prepare Ingredients: Halve cherry tomatoes, dice onion, mince garlic, and chop fresh basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 mins). Add garlic and cook for 1 minute until fragrant. Stir in tomato paste and cook for 1-2 minutes.
- 3. Simmer Tomatoes: Add halved cherry tomatoes, balsamic vinegar, oregano (if using), salt, and pepper to the pan. Bring to a gentle simmer, then cover and cook for 15-20 minutes, pressing on tomatoes to help them burst.
- 4. Finish & Season: Remove lid, stir in fresh basil. Taste and adjust seasoning as needed (more salt, pepper, or balsamic). Serve immediately with your favorite pasta.
