Unlock incredible flavor with this easy roasted cherry tomato spaghetti sauce. It’s a quick, delicious way to elevate your weeknight pasta.
Ingredients
- 2 lbs (approx. 4 cups) cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, freshly ground
- 1/4–1/2 tsp red pepper flakes (optional, for a little heat)
- 1 lb spaghetti or your favorite pasta
- 1/2 cup fresh basil leaves, chopped (or other fresh herbs like oregano)
- 1/2 cup reserved pasta water (optional)
- Freshly grated Parmesan cheese, for serving
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes, peeled garlic cloves, olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat everything evenly.
- Roast for 25-35 minutes, or until tomatoes are blistered, softened, and some have burst, and garlic is tender.
- Carefully remove from oven. For a chunkier sauce, mash the tomatoes and garlic directly on the sheet with a fork. For a smoother sauce, transfer to a blender or food processor and pulse to desired consistency.
- While tomatoes roast, cook spaghetti according to package directions. Reserve about 1/2 cup of pasta water before draining.
- Add drained pasta directly to the roasted tomato sauce. Toss to combine. If sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
- Stir in fresh chopped basil.
- Serve immediately, topped with freshly grated Parmesan cheese.
