Ingredients
- 1 lb cherry or grape tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or preferred pasta
- 1/4 cup reserved pasta water (optional)
- Freshly grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, without browning.
- Add cherry tomatoes, salt, and pepper to the skillet. Increase heat to medium-high and cook, stirring and occasionally crushing tomatoes, until they burst and form a rustic sauce (8-10 minutes).
- Reduce heat to low. Stir in fresh basil and oregano. Taste and adjust seasonings as needed. Simmer for 5 minutes.
- Cook pasta according to package directions. Reserve 1/4 cup pasta water, then drain.
- Add drained pasta to the sauce, tossing to coat. Add reserved pasta water if needed for desired consistency. Serve immediately with Parmesan cheese.
