Ingredients

  • 1 tablespoon extra virgin olive oil
  • 4 cloves garlic, thinly sliced or minced
  • 2 pints (about 4 cups) cherry tomatoes, whole or halved
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 cup fresh basil leaves, torn or roughly chopped
  • (Optional) Pinch of red pepper flakes
  • (Optional) 1/4 cup pasta cooking water

Instructions

  • Heat olive oil in a large skillet or saucepan over medium-low heat. Add garlic and cook for 2-3 minutes until fragrant, being careful not to brown.
  • Add cherry tomatoes, salt, and pepper to the pan. Increase heat to medium and cook, stirring occasionally, until tomatoes soften and burst, about 10-15 minutes.
  • Use the back of a spoon or a potato masher to gently mash any remaining whole tomatoes, creating a saucy consistency. Taste and adjust seasonings.
  • Remove from heat. Stir in fresh basil leaves until just wilted.
  • Toss immediately with cooked spaghetti and serve.
