This easy cherry tomato spaghetti sauce bursts with fresh, sweet-tart flavors, creating a vibrant and satisfying meal in under 30 minutes. It’s my go-to for a quick, delicious homemade pasta dinner.
Ingredients
- 1.5 lbs (about 4–5 cups) cherry or grape tomatoes
- 4–6 cloves garlic, minced
- 3–4 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes (or to taste)
- 1/2 cup fresh basil, torn or chiffonaded
- Salt and freshly ground black pepper, to taste
- Optional, for serving: Freshly grated Parmesan cheese
- Optional, for serving: cook pasta of choice
Instructions
- 1. Prepare Ingredients: Rinse tomatoes. Mince garlic. Have basil ready.
- 2. Sauté Aromatics: In a large skillet over medium heat, heat olive oil. Add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn.
- 3. Add Tomatoes and Burst: Add cherry tomatoes to the skillet. Cook, stirring occasionally, for 8-10 minutes until they soften and burst. Gently press with a spoon to help them along.
- 4. Simmer: Reduce heat to low and simmer for 5-7 minutes, allowing flavors to meld. If too thick, add a splash of pasta water.
- 5. Finish and Season: Remove from heat. Stir in fresh basil. Season generously with salt and pepper. Toss directly with cooked pasta and serve with Parmesan cheese, if desired.
