Ingredients
- 1.5 lbs (about 4–5 cups) cherry tomatoes, halved
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme (optional)
- 1/4 tsp red pepper flakes (optional, adjust to taste)
- 1/2 tsp sugar (optional, to balance acidity)
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil leaves, torn or chopped
- 1 lb spaghetti or your favorite pasta
- Freshly grated Parmesan cheese, for serving
Instructions
- 1. Prep Ingredients: Wash and halve cherry tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic, dried oregano, thyme, and red pepper flakes (if using). Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
- 3. Simmer Tomatoes: Add halved cherry tomatoes to the pan. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes soften, burst, and release their juices.
- 4. Crush & Thicken: Reduce heat to low. Use a potato masher or the back of a spoon to gently crush the tomatoes to your desired consistency. Simmer for another 10-15 minutes to thicken the sauce and meld flavors.
- 5. Season & Finish: Season generously with salt and pepper. Add a pinch of sugar if needed to balance acidity. Stir in fresh basil leaves just before serving.
- 6. Serve: Toss with cooked spaghetti and garnish with fresh Parmesan cheese.
