Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- 2 pints (about 4 cups) cherry tomatoes, halved
- ½ tsp kosher salt, or to taste
- ¼ tsp freshly ground black pepper, or to taste
- ¼ tsp granulated sugar (optional, to balance acidity)
- ¼ cup fresh basil leaves, roughly chopped
- 1 tbsp unsalted butter (optional, for richness)
- Optional: Drizzle of balsamic glaze or vinegar
Instructions
- 1. Prep Ingredients: Wash and halve cherry tomatoes. Finely dice onion and mince garlic. Chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened (5-7 mins). Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add halved cherry tomatoes, salt, pepper, and sugar (if using) to the pan. Increase heat to medium-high and cook, stirring and pressing some tomatoes, until they burst and release juices (8-12 mins). Reduce heat to low and simmer for 5-10 minutes to thicken.
- 4. Finish & Serve: Remove from heat. Stir in fresh basil and butter (if using). Taste and adjust seasoning. Serve immediately with your favorite pasta and a sprinkle of Parmesan.
