Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, peeled and smashed
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil leaves, chopped or torn
- 1/4 cup water or vegetable broth (for simmering)
- 12 oz spaghetti or pasta of choice
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- Prep Tomatoes and Aromatics: Preheat oven to 400°F (200°C). Spread tomatoes and garlic on a baking sheet. Drizzle with olive oil, season with salt, pepper, and red pepper flakes. Toss to coat.
- Roast for Flavor: Roast for 25-30 minutes until tomatoes are bursting and garlic is golden.
- Simmer Briefly: Transfer roasted ingredients and pan juices to a skillet. Add water/broth and simmer for 5-7 minutes.
- Mash and Season: Gently mash some tomatoes in the skillet. Stir in fresh basil. Taste and adjust seasoning.
- Toss with Pasta: Cook spaghetti al dente. Drain, reserving pasta water. Add pasta to sauce, toss well, adding reserved pasta water as needed. Serve with Parmesan.
