Ingredients
- 2 lbs (about 900g) cherry or grape tomatoes
- 6–8 cloves garlic, peeled and smashed
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1 lb spaghetti or your favorite pasta
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Optional: Pinch of red pepper flakes, grated Parmesan for serving
Instructions
- Preheat oven to 400°F (200°C).
- Spread cherry tomatoes and smashed garlic on a large baking sheet. Drizzle with olive oil, salt, and pepper. Toss to coat.
- Roast for 25-35 minutes, until tomatoes are blistered and bursting, and garlic is golden.
- While tomatoes roast, cook pasta in salted boiling water according to package directions until al dente. Reserve 1 cup pasta water, then drain pasta.
- Transfer roasted tomatoes and garlic to a large skillet. Mash some tomatoes with a spoon to create a saucier consistency. Simmer for 5-7 minutes.
- Add drained pasta to the skillet with the sauce. Toss well, adding reserved pasta water as needed to reach desired consistency.
- Stir in fresh basil. Taste and adjust seasoning. Serve immediately with optional Parmesan.
