Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3 cloves garlic, minced
- 1 small yellow onion, finely diced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn or chopped
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Optional: 1-2 tablespoons balsamic glaze
Instructions
- Rinse cherry tomatoes. Mince garlic and dice onion.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened (5-7 minutes). Add garlic and cook until fragrant (1 minute).
- Add cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium-high and cook, stirring, until tomatoes begin to burst (8-12 minutes). Gently press some tomatoes with a spoon.
- Reduce heat to low, cover, and simmer for 10-15 minutes to meld flavors.
- Remove from heat. Stir in fresh basil and red pepper flakes (if using). Taste and adjust seasoning as needed. Drizzle with balsamic glaze if desired. Serve immediately over your favorite pasta.
