This easy-to-make sauce brings out the best flavor in your pasta dishes, delivering a vibrant and naturally sweet experience. It’s quick, flavorful, and will become your new go-to for pasta night.
Ingredients
- 2 lbs cherry tomatoes (halved or quartered)
- 3 tbsp extra virgin olive oil
- 1 medium yellow onion (finely diced)
- 4–5 cloves garlic (minced)
- 1/4 cup dry red wine or vegetable broth
- 1/2 tsp red pepper flakes (optional, to taste)
- 1/4 cup fresh basil leaves (chopped, plus more for garnish)
- 1 tbsp fresh oregano (chopped)
- Salt and freshly ground black pepper to taste
- Optional: Parmesan or Pecorino cheese for serving
Instructions
- 1. Prep Ingredients: Wash and halve/quarter cherry tomatoes. Mince garlic and finely dice onion.
- 2. Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and cook until translucent (5-7 mins). Add garlic and red pepper flakes; cook for 1 minute until fragrant.
- 3. Deglaze & Simmer: Pour in red wine or broth, scraping up browned bits. Add tomatoes, stir, bring to a gentle simmer. Reduce heat to low, cover, and cook for 25-60 minutes, until tomatoes burst and soften.
- 4. Finish Sauce: Uncover. Use a spoon or potato masher to gently crush tomatoes. Stir in fresh basil and oregano. Season generously with salt and pepper to taste.
- 5. Optional Blending: For a smoother sauce, carefully blend a portion or all of the sauce with an immersion blender or in a regular blender. Serve immediately with your favorite pasta and garnishes.
