Ingredients
- 1.5 lbs (about 4–5 cups) cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 teaspoon sea salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper, plus more to taste
- 1/2 teaspoon granulated sugar (optional, to balance acidity)
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons fresh oregano, chopped (or 1 tsp dried)
- Cooked pasta, for serving
Instructions
- 1. Prep Tomatoes & Aromatics: Rinse cherry tomatoes. Mince garlic.
- 2. Sauté Garlic & Oil: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add whole cherry tomatoes, salt, pepper, and sugar (if using). Stir, cover, and simmer for 15-20 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Crush & Thicken: Remove lid. Gently crush any remaining whole tomatoes with a wooden spoon. Simmer uncovered for 5-10 minutes, allowing sauce to thicken to desired consistency.
- 5. Finish & Serve: Remove from heat. Stir in fresh basil and oregano. Taste and adjust seasoning. Toss with hot cooked pasta and serve immediately.
