Vibrant Cherry Tomato Spaghetti Sauce

Description

An incredibly fresh and easy cherry tomato spaghetti sauce bursting with sweet, tangy flavors. Perfect for a quick weeknight meal or an impressive dinner.


Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes, halved (some left whole)
  • 34 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Pinch of sugar (optional, for balancing acidity)
  • 1/4 cup fresh basil leaves, roughly chopped
  • 8 oz spaghetti or your favorite pasta
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Wash and halve about half to two-thirds of the cherry tomatoes; leave the rest whole. Mince the garlic and chop the basil.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1 minute until fragrant, being careful not to burn the garlic.
  • Add cherry tomatoes, salt, pepper, and a pinch of sugar (if using) to the skillet. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally. The tomatoes will blister and burst; gently crush some with the back of a spoon to create a saucy consistency.
  • Remove from heat and stir in fresh basil. Toss immediately with freshly cooked al dente spaghetti.
  • Serve hot, garnished with extra fresh basil and grated Parmesan cheese.
