Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 6–8 cloves garlic, sliced or lightly smashed
- 1/4 cup extra virgin olive oil, plus more for serving
- 1 teaspoon sea salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 1/4 teaspoon red pepper flakes (optional, for a slight kick)
- 1/2 cup fresh basil leaves, torn or chopped
- Optional: 1 small Parmesan rind (for simmering)
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, spread cherry tomatoes and garlic. Drizzle with olive oil, salt, pepper, and red pepper flakes. Toss to coat.
- Roast for 25-35 minutes, or until tomatoes are burst and caramelized.
- Transfer roasted tomatoes and garlic to a saucepan. Mash with a spoon for chunky sauce, or blend for smoother.
- Add Parmesan rind (if using) and simmer over medium-low heat for 10-15 minutes. Taste and adjust seasoning.
- Remove from heat, discard rind, and stir in fresh basil.
- Serve immediately over hot pasta, with an extra drizzle of olive oil and fresh Parmesan.
