Ingredients
- 1 tbsp extra virgin olive oil
- 1 small yellow onion, minced
- 3 cloves garlic, minced
- 2 pints (approx. 4 cups) cherry tomatoes, halved
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- Optional: 1 tsp balsamic vinegar for extra depth
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add minced onion and garlic; sauté until softened and fragrant, about 3-5 minutes.
- Stir in halved cherry tomatoes and red pepper flakes (if using). Increase heat to medium-high.
- Cook, stirring occasionally, until tomatoes begin to burst and soften, about 8-12 minutes. Gently press some tomatoes with a spoon to release juices.
- Reduce heat to low, cover, and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken.
- Remove from heat. Stir in fresh basil and oregano. Season generously with salt and pepper. Add balsamic vinegar if desired.
- Serve immediately over your favorite pasta or other accompaniments.
