Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 2–3 tbsp extra virgin olive oil
- 1/4 cup fresh basil leaves, chopped (plus more for garnish)
- 1/2 tsp red pepper flakes (optional, for a kick)
- Salt and freshly ground black pepper to taste
- Cooked spaghetti or pasta of choice, for serving
- Freshly grated Parmesan cheese (optional, for serving)
Instructions
- 1. Prep Ingredients: Wash tomatoes. Mince garlic. Chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté for 30-60 seconds until fragrant, being careful not to burn.
- 3. Cook Tomatoes: Add cherry tomatoes, salt, and pepper to the pan. Increase heat to medium-high. Cook, stirring occasionally and gently pressing on tomatoes, until they burst and release their juices (8-10 minutes).
- 4. Simmer Sauce: Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
- 5. Finish: Remove from heat, stir in most of the fresh basil. Taste and adjust seasonings as needed. Toss with cooked pasta, garnish with remaining basil and Parmesan cheese, and serve immediately.
