Description
A vibrant and fresh homemade spaghetti sauce bursting with the natural sweetness of cherry tomatoes. Easy to make and incredibly flavorful, perfect for any pasta night.
Ingredients
- 2 lbs cherry or grape tomatoes, halved
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 4–5 cloves garlic, minced
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil, chopped
- 1–2 tbsp fresh oregano, chopped
- 1/2 tsp coarse sea salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 1/4 – 1/2 tsp sugar (to balance acidity)
- Optional: 1/4 – 1/2 tsp red pepper flakes
- Optional: 1 small Parmesan rind
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add half of the halved cherry tomatoes; cook undisturbed for 3-4 minutes until slightly charred and burst.
- Add diced onion to the pan; sauté for 5-7 minutes until translucent. Add minced garlic and remaining cherry tomatoes, cooking for 3-5 minutes until fragrant and softened. Stir in red pepper flakes if using.
- Pour in water or broth, bring to a gentle simmer, then reduce heat to low. Partially cover and cook for 20-30 minutes, stirring occasionally and gently mashing tomatoes. Add Parmesan rind if using.
- Remove Parmesan rind. Stir in fresh basil, oregano, salt, pepper, and sugar. Taste and adjust seasonings. Simmer for another 5 minutes to meld flavors. Serve immediately with your favorite pasta.
