Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil, roughly chopped
- Salt to taste
- Freshly ground black pepper to taste
- Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); cook for 1-2 minutes until fragrant.
- Add cherry tomatoes to the skillet. Cover and cook for 8-10 minutes, stirring occasionally, until tomatoes burst.
- Uncover and gently mash about half of the tomatoes with the back of a spoon or potato masher. Simmer for another 5-7 minutes, uncovered, to reduce slightly.
- Remove from heat. Stir in fresh basil. Season generously with salt and freshly ground black pepper to taste.
- Serve immediately over your favorite pasta, topped with Parmesan cheese if desired.
