Ingredients

  • 2 pints (about 4 cups) cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 45 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: Grated Parmesan cheese for serving
  • Optional: Drizzle of balsamic glaze

Instructions

  • Heat olive oil in a large skillet or wide pot over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and lightly golden.
  • Add cherry tomatoes to the skillet. Season with salt and black pepper. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until tomatoes soften and burst.
  • Use the back of a wooden spoon or potato masher to gently mash some of the burst tomatoes to create a sauce. Leave some whole for texture.
  • Reduce heat to low and simmer for another 5-7 minutes, allowing flavors to meld and sauce to thicken slightly. Taste and adjust seasonings as needed.
  • Remove from heat and stir in the fresh basil leaves.
  • Serve immediately over your favorite pasta, garnished with grated Parmesan and a drizzle of balsamic glaze if desired.
