This vibrant cherry tomato spaghetti sauce recipe is a quick and flavorful delight, perfect for any weeknight meal. It celebrates the natural sweetness of ripe cherry tomatoes, creating a light yet robust pasta dish.
Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 3 tablespoons extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt to taste
- Freshly ground black pepper to taste
- Optional: Grated Parmesan cheese for serving
- Optional: Drizzle of balsamic glaze
Instructions
- Heat olive oil in a large skillet or wide pot over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and lightly golden.
- Add cherry tomatoes to the skillet. Season with salt and black pepper. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until tomatoes soften and burst.
- Use the back of a wooden spoon or potato masher to gently mash some of the burst tomatoes to create a sauce. Leave some whole for texture.
- Reduce heat to low and simmer for another 5-7 minutes, allowing flavors to meld and sauce to thicken slightly. Taste and adjust seasonings as needed.
- Remove from heat and stir in the fresh basil leaves.
- Serve immediately over your favorite pasta, garnished with grated Parmesan and a drizzle of balsamic glaze if desired.
