Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil, plus more for serving
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 – 1/2 teaspoon red pepper flakes (optional, to taste)
- 1/4 cup fresh basil leaves, chopped (plus more for garnish)
- 1 tablespoon fresh oregano leaves, chopped (or 1 teaspoon dried)
- Cooked spaghetti, for serving
- Freshly grated Parmesan or Pecorino Romano cheese, for serving
Instructions
- Step 1: Prep the Tomatoes and Aromatics: Preheat oven to 400°F (200°C). Arrange cherry tomatoes and peeled garlic cloves in a single layer on a large baking sheet. Drizzle with olive oil, then season with salt, black pepper, and red pepper flakes. Toss to coat evenly.
- Step 2: Roast for Sweetness and Depth: Roast for 25-35 minutes, or until tomatoes have burst, softened, and are slightly caramelized. Garlic should be golden and fragrant.
- Step 3: Simmer and Blend (or Mash): Transfer roasted tomatoes and garlic (with pan juices) to a medium saucepan. Add fresh basil and oregano. Using a potato masher, gently mash to your desired consistency. Simmer over medium-low heat for 10-15 minutes, allowing flavors to meld.
