Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/4 cup fresh basil leaves, chopped (plus more for garnish)
- Salt to taste
- Freshly ground black pepper to taste
- Optional: 1/4 teaspoon red pepper flakes
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- Prep Your Ingredients: Wash tomatoes. Mince garlic. Chop basil, reserving some for garnish.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn.
- Simmer the Tomatoes: Add cherry tomatoes to the skillet. Season generously with salt and pepper. Cover and simmer for 10-15 minutes until softened and juicy.
- Rupture and Reduce: Uncover the pan. Gently mash tomatoes with the back of a spoon to release pulp. Continue to simmer for 5-10 minutes, or until the sauce thickens to your desired consistency.
- Finish with Basil: Remove from heat. Stir in chopped fresh basil. Taste and adjust seasonings. Serve immediately over pasta with optional Parmesan.
