Ingredients
- 1.5 lbs cherry tomatoes
- 3 tbsp extra virgin olive oil, divided
- 6 cloves garlic, minced
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil leaves, chopped
- 1/2 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 12 oz spaghetti or preferred pasta
Instructions
- Preheat oven to 400°F (200°C). Halve cherry tomatoes and toss on a baking sheet with 2 tbsp olive oil, salt, pepper, and red pepper flakes.
- Roast for 20-25 minutes until soft and bursting.
- While tomatoes roast, heat 1 tbsp olive oil in a large skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
- Transfer roasted tomatoes (with juices) to the skillet. Add water/broth and simmer for 5-7 minutes.
- Mash tomatoes with a spoon for a chunky sauce, or blend with an immersion blender for a smoother consistency.
- Remove from heat, stir in fresh basil, and season to taste. Toss with cooked pasta and serve immediately.
