Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 1/4 cup extra virgin olive oil
- 4–5 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly torn
- Salt and freshly ground black pepper to taste
- 1/4 cup reserved pasta water (optional, for thinning)
Instructions
- 1. Prep Tomatoes and Garlic: Rinse cherry tomatoes. Thinly slice garlic cloves.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes (if using); sauté 1-2 minutes until fragrant and lightly golden.
- 3. Cook Tomatoes: Add whole cherry tomatoes, salt, and pepper to the skillet. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until tomatoes blister and burst.
- 4. Simmer and Develop Flavor: Reduce heat to low and simmer for another 10-15 minutes, allowing flavors to meld and deepen.
- 5. Mash for Texture: Gently mash some of the tomatoes with the back of a spoon for a rustic texture.
- 6. Finish with Basil: Remove from heat and stir in fresh basil leaves. Serve immediately over your favorite pasta.
