Ingredients
- 1 pint (about 2 cups) cherry tomatoes
- 3–4 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, roughly torn or chopped
- Salt and freshly ground black pepper to taste
- Optional: Freshly grated Parmesan or Pecorino Romano for serving
- Optional: Cooked spaghetti or your favorite pasta
Instructions
- 1. Prep Ingredients: Wash cherry tomatoes. Slice garlic. Tear basil leaves.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté 1-2 minutes until fragrant.
- 3. Add Tomatoes & Simmer: Add cherry tomatoes, salt, and pepper. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes.
- 4. Burst & Crush: Uncover. Gently crush most of the tomatoes with the back of a spoon. Simmer uncovered for 5-10 minutes to thicken.
- 5. Finish with Basil: Remove from heat. Stir in fresh basil. Taste and adjust seasoning. Toss with cooked pasta if desired, and serve immediately with cheese.
