Craft the perfect homemade spaghetti sauce with vibrant cherry tomatoes, fresh basil, and garlic. This recipe delivers a naturally sweet and bright flavor that’s simple enough for any weeknight.
Ingredients
- 1.5 lbs (approx. 680g) fresh cherry tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup good quality extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- Salt and freshly ground black pepper, to taste
- Optional: Parmesan cheese, for serving
Instructions
- 1. Prepare Tomatoes: Wash cherry tomatoes. Leave whole or lightly pierce each one. Mince garlic and chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn.
- 3. Simmer Sauce: Add cherry tomatoes to the skillet. Season generously with salt and pepper. Stir, bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Smash Tomatoes: Gently smash some of the cooked tomatoes with the back of a spoon or fork to release more pulp and thicken the sauce slightly. Leave some whole for texture.
- 5. Finish with Herbs: Remove from heat and stir in the fresh basil. Taste and adjust seasoning as needed. Serve immediately over your favorite pasta, garnished with optional Parmesan cheese.
