Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3 cloves garlic, minced
- 1/2 small yellow onion or 1 large shallot, finely diced
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- Optional: 1 teaspoon balsamic glaze
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium heat. Add diced onion/shallot and cook until translucent (3-5 minutes). Add minced garlic and red pepper flakes (if using), cook until fragrant (1 minute).
- Add cherry tomatoes to the pan. Season generously with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, until tomatoes burst and release juices (8-12 minutes). Gently smash some with a spoon.
- Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken. Stir occasionally.
- Remove from heat. Stir in fresh basil and balsamic glaze (if using). Taste and adjust seasoning.
- Serve immediately over your favorite cooked pasta.
