Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/4 cup extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- Salt to taste
- Freshly cracked black pepper to taste
- 1 pound spaghetti or other pasta of choice
- 1/2 cup reserved pasta water (optional, for thinning)
Instructions
- 1. Prep Ingredients: Halve tomatoes, mince garlic, and chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté 1-2 minutes until fragrant.
- 3. Cook Tomatoes: Add halved tomatoes, increase heat to medium-high. Cook for 8-10 minutes, stirring and occasionally pressing to burst, until juices release. Season with salt and pepper.
- 4. Simmer Sauce: Reduce heat to low and simmer for 5-7 minutes, allowing flavors to meld and sauce to thicken. Add a splash of pasta water if too dry.
- 5. Finish & Serve: Remove from heat, stir in fresh basil. Toss immediately with cooked spaghetti. Taste and adjust seasoning.
