Ingredients

  • 1 lb (about 450g) cherry tomatoes, washed and halved
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional: 1/2 tsp balsamic glaze or pinch of sugar
  • 12 oz spaghetti or pasta of choice

Instructions

  • 1. Sauté Garlic and Chili: In a large skillet, heat olive oil over medium-low heat. Add minced garlic and red pepper flakes (if using). Cook for 1-2 minutes until fragrant, being careful not to burn.
  • 2. Add Tomatoes: Increase heat to medium. Add halved cherry tomatoes to the pan. Cook for 8-10 minutes, stirring occasionally, until most tomatoes have burst and softened. Gently press some with a spoon to release juices.
  • 3. Simmer Sauce: Reduce heat to low and simmer for another 5-7 minutes, allowing flavors to meld.
  • 4. Finish with Basil and Season: Remove from heat and stir in fresh basil. Taste and season generously with salt and pepper. Add balsamic glaze or sugar if needed to balance acidity.
  • 5. Cook and Toss Pasta: Cook pasta according to package directions, reserving 1/2 cup pasta water. Drain pasta and add directly to the sauce. Toss well, adding reserved pasta water a tablespoon at a time if needed to achieve desired consistency. Serve immediately.
