Description
This vibrant cherry tomato spaghetti sauce comes together in under 30 minutes, bursting with fresh, sweet, and tangy flavors. It’s the perfect weeknight meal solution.
Ingredients
- 2 tbsp extra virgin olive oil
- 1 small shallot, finely minced
- 3 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 2 pints (about 4 cups) cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- 1/4 cup freshly grated Parmesan cheese, plus more for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add shallot and cook until softened, about 2-3 minutes. Add garlic and red pepper flakes (if using), cook for 1 minute until fragrant.
- Add cherry tomatoes to the skillet. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes burst. Gently mash any un-burst tomatoes with a spoon.
- Reduce heat to low. Stir in half of the fresh basil and oregano. Season generously with salt and pepper. Simmer for 5-7 minutes.
- Remove from heat. Stir in remaining fresh basil and oregano, and Parmesan cheese. Serve immediately with your favorite pasta.
