Description
This vibrant cherry tomato spaghetti sauce is bursting with fresh flavors and comes together in under 30 minutes. It’s the perfect weeknight meal for a taste of homemade Italian cooking.
Ingredients
- 1 lb (450g) cherry tomatoes, halved
- 3 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes and a pinch of salt to the skillet. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until tomatoes soften and burst. Gently crush some tomatoes with a spoon.
- Reduce heat to low and simmer for another 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
- Remove from heat, stir in most of the fresh basil. Taste and adjust seasoning with salt and pepper.
- Toss with cooked al dente spaghetti and serve immediately, garnished with remaining fresh basil.
