Description
This easy-to-make roasted cherry tomato spaghetti sauce is bursting with fresh, sweet, and garlicky flavors. It’s perfect for a quick weeknight meal or a delightful dinner party.
Ingredients
- 2 lbs cherry or grape tomatoes
- 1/4 cup extra virgin olive oil, divided
- 6–8 cloves garlic, thinly sliced
- 1/4 – 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, packed
- 1–2 tbsp fresh oregano leaves
- 1 tsp sea salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- Freshly grated Parmesan cheese, for serving
Instructions
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with 2 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until blistered and tender.
- While tomatoes roast, heat remaining 2 tbsp olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes; sauté for 2-3 minutes until fragrant.
- Add roasted tomatoes (with juices) to the skillet. Gently mash some tomatoes with a spoon. Stir in fresh oregano. Simmer for 10-15 minutes, allowing flavors to meld.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning as needed.
- Serve immediately over cooked pasta, garnished with Parmesan and a drizzle of olive oil.
