Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3 tablespoons extra virgin olive oil
- 1 small yellow onion, finely diced
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 1/4 cup fresh basil leaves, roughly chopped
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- Step 1: Prep Aromatics. Heat olive oil in a large skillet or wide pot over medium heat. Add diced onion and sauté for 3-5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
- Step 2: Sauté Tomatoes to Burst. Add cherry tomatoes to the skillet. Season generously with salt, black pepper, and red pepper flakes (if using). Cook, stirring occasionally, for 8-12 minutes, until most tomatoes have softened and burst open. Gently press any stubborn tomatoes with a spoon.
- Step 3: Simmer & Thicken. Reduce heat to low and simmer uncovered for 5-10 minutes, allowing the sauce to thicken and flavors to concentrate.
- Step 4: Season & Finish. Taste and adjust seasonings as needed. Stir in fresh basil during the last minute of cooking until just wilted. Remove from heat and serve immediately over pasta.
