Ingredients

  • 2 lbs cherry tomatoes
  • 34 cloves garlic, thinly sliced
  • 3 tbsp extra virgin olive oil, divided
  • 1/2 cup fresh basil, chopped, plus more for garnish
  • 1/2 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 lb spaghetti
  • Parmesan cheese, for serving

Instructions

  • Preheat oven to 400°F (200°C). Spread cherry tomatoes and sliced garlic on a baking sheet. Drizzle with 2 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until blistered and bursting.
  • While tomatoes roast, bring a large pot of salted water to a boil for spaghetti.
  • Transfer roasted tomatoes, garlic, and all juices to a large skillet. Gently crush some tomatoes. Add remaining 1 tbsp olive oil and red pepper flakes (if using). Simmer for 5-7 minutes.
  • Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water.
  • Add drained spaghetti and half of the fresh basil to the sauce. Toss to coat, adding reserved pasta water as needed to reach desired consistency.
  • Stir in remaining fresh basil. Serve immediately with Parmesan cheese.
