Description
This vibrant cherry tomato spaghetti sauce is incredibly easy to make, bursting with sweet, fresh flavors. It’s the perfect weeknight meal solution that tastes gourmet.
Ingredients
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 2 lbs (about 900g) cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- 1/2 cup reserved pasta water (from cooking spaghetti)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes to the skillet. Season generously with salt and pepper. Stir and bring to a gentle simmer.
- Reduce heat to low, cover partially, and cook for 15-20 minutes, or until tomatoes have softened and burst.
- Use the back of a wooden spoon or potato masher to gently crush any remaining whole tomatoes. Simmer uncovered for another 5-10 minutes to thicken.
- Stir in fresh basil and oregano. Taste and adjust seasoning. If needed, thin with a splash of reserved pasta water.
