This simple yet incredibly flavorful cherry tomato spaghetti sauce comes together quickly, perfect for a delicious weeknight meal. It’s bursting with natural sweetness and aromatic herbs, creating a vibrant and satisfying pasta experience.
Ingredients
- 1.5 lbs (about 680g) fresh cherry tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp dried oregano (or 1 tbsp fresh, chopped)
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil leaves, roughly chopped (plus more for garnish)
- Optional: Pinch of red pepper flakes
- Optional: Drizzle of balsamic glaze
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add minced garlic and dried oregano (if using). Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
- Add cherry tomatoes to the pan. Season generously with salt, pepper, and red pepper flakes (if using). Increase heat to medium-high.
- Cook, stirring occasionally, for 10-15 minutes, or until tomatoes burst and begin to break down, forming a sauce. Use the back of a spoon to gently mash some tomatoes for a thicker consistency.
- Remove from heat. Stir in fresh basil. Taste and adjust seasoning as needed. Drizzle with balsamic glaze if desired.
- Toss with your favorite cooked spaghetti or pasta and serve immediately.
