Description
An incredibly fresh and vibrant homemade spaghetti sauce featuring sweet, burst cherry tomatoes. Perfect for a quick and flavorful pasta night.
Ingredients
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 2 lbs cherry or grape tomatoes, halved if large
- 1/2 tsp sea salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/2 cup fresh basil, torn or roughly chopped
- 2 tbsp fresh oregano, roughly chopped (or 1 tsp dried)
- Optional: pinch of sugar or drizzle of balsamic glaze
- Cooked spaghetti, for serving
- Freshly grated Parmesan cheese, for serving
Instructions
- 1. Prep Ingredients: Wash and halve cherry tomatoes. Mince garlic. Have fresh herbs ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3. Cook Tomatoes: Add halved cherry tomatoes, salt, and pepper to the skillet. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes blister and burst, releasing their juices.
- 4. Simmer: Reduce heat to low and simmer for another 10-15 minutes, stirring occasionally and gently mashing some tomatoes with a spoon to thicken the sauce.
- 5. Finish: Remove from heat. Stir in fresh basil and oregano. Taste and adjust seasonings as needed. Serve immediately over cooked spaghetti with Parmesan cheese.
