Ingredients

  • 1.5 lbs (approx. 680g) cherry or grape tomatoes
  • 1/4 cup extra virgin olive oil
  • 46 cloves garlic, minced
  • 1/21 tsp red pepper flakes (optional, adjust to taste)
  • 1/2 tsp dried oregano (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves, torn or roughly chopped
  • Optional: 1/2 tsp sugar (if tomatoes are acidic)

Instructions

  • Heat olive oil in a large skillet or wide pot over medium-low heat.
  • Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Add cherry tomatoes to the pot. Season with a generous pinch of salt and pepper. Increase heat to medium-high, bring to a gentle boil, then reduce heat to low, cover partially, and simmer for 15-20 minutes, or until tomatoes have burst and softened.
  • Use a potato masher, spoon, or fork to gently mash the cooked tomatoes against the side of the pot to create a saucier consistency.
  • Taste and adjust seasoning as needed (add more salt, pepper, or a pinch of sugar if desired).
  • Remove from heat and stir in the fresh basil leaves.
  • Toss immediately with cooked spaghetti or your favorite pasta and serve warm.
