Description
Whip up this vibrant and naturally sweet cherry tomato spaghetti sauce in under 30 minutes. Perfect for busy weeknights, it’s packed with fresh flavor and requires minimal effort.
Ingredients
- 1.5 lbs (approx. 680g) cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, minced
- 1/2 – 1 tsp red pepper flakes (optional, adjust to taste)
- 1/2 tsp dried oregano (optional)
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil leaves, torn or roughly chopped
- Optional: 1/2 tsp sugar (if tomatoes are acidic)
Instructions
- Heat olive oil in a large skillet or wide pot over medium-low heat.
- Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add cherry tomatoes to the pot. Season with a generous pinch of salt and pepper. Increase heat to medium-high, bring to a gentle boil, then reduce heat to low, cover partially, and simmer for 15-20 minutes, or until tomatoes have burst and softened.
- Use a potato masher, spoon, or fork to gently mash the cooked tomatoes against the side of the pot to create a saucier consistency.
- Taste and adjust seasoning as needed (add more salt, pepper, or a pinch of sugar if desired).
- Remove from heat and stir in the fresh basil leaves.
- Toss immediately with cooked spaghetti or your favorite pasta and serve warm.
