Ingredients
- 1.5 lbs (about 4 cups) cherry or grape tomatoes
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped or torn
- 1/2 tsp red pepper flakes (optional)
- Salt to taste
- Freshly ground black pepper to taste
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
- Add cherry tomatoes to the skillet. Stir to coat them in the oil and garlic. Cover the pan.
- Simmer for 10-15 minutes, stirring occasionally and gently pressing any un-burst tomatoes with the back of a spoon, until they have softened and created a rustic sauce.
- Remove from heat. Stir in the fresh basil leaves.
- Season generously with salt and freshly ground black pepper. Taste and adjust seasoning as needed.
- Serve immediately over your favorite cooked pasta, garnished with Parmesan cheese if desired.
