Ingredients

  • 2 lbs (approx. 4 cups) cherry or grape tomatoes
  • 68 cloves garlic, peeled and lightly smashed
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup fresh basil leaves, torn or chopped
  • 12 oz spaghetti or your preferred pasta
  • Optional: Pinch of red pepper flakes
  • Optional: Freshly grated Parmesan cheese for serving

Instructions

  • Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, smashed garlic, olive oil, salt, and pepper. Toss to coat evenly.
  • Roast for 20-25 minutes, or until tomatoes are bursting and slightly caramelized.
  • Transfer roasted tomatoes and garlic to a large skillet. Gently crush some tomatoes with a spoon to create a saucier consistency. Simmer over medium-low heat for 5-7 minutes.
  • Meanwhile, cook spaghetti according to package instructions, reserving 1 cup of pasta water.
  • Remove sauce from heat, stir in fresh basil and adjust seasonings.
  • Add drained pasta directly to the skillet with the sauce. Toss well, adding reserved pasta water as needed to achieve desired consistency. Serve immediately, garnished with Parmesan if desired.
