This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor and comes together in under 30 minutes. It’s the perfect weeknight meal solution that tastes like it simmered all day.
Ingredients
- 2 pints (about 4 cups) cherry tomatoes, halved
- 3 tablespoons extra virgin olive oil, plus more for finishing
- 1 small yellow onion, finely diced
- 3–4 cloves garlic, minced or thinly sliced
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup fresh basil leaves, roughly chopped, plus more for garnish
- Optional: 1/2 teaspoon sugar or 1 teaspoon red wine vinegar
- Optional: Pinch of red pepper flakes
Instructions
- 1. Prepare Ingredients: Halve cherry tomatoes. Dice onion and mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and a pinch of salt; cook until softened (5-7 mins). Add garlic and cook until fragrant (1 min).
- 3. Cook Tomatoes: Add halved cherry tomatoes to the pan. Increase heat to medium-high. Cook for 8-12 minutes, stirring occasionally and pressing tomatoes with a spoon, until most have burst and released their juices.
- 4. Adjust Texture: For a rustic sauce, mash remaining tomatoes. For smoother, blend half to two-thirds of the sauce with an immersion blender or in a regular blender, then return to the pan.
- 5. Finish & Season: Stir in fresh basil. Taste and adjust seasoning with salt, pepper, and optional sugar or vinegar. Serve immediately, perhaps with a drizzle of fresh olive oil.
