This easy to bake cherry tomato spaghetti sauce recipe is bursting with sweet, concentrated tomato flavor, a hint of garlic, and fresh basil. It’s perfect for busy weeknights or leisurely weekend dinners, offering a gourmet taste with minimal effort.
Ingredients
- 2 lbs (approx. 900g) cherry tomatoes, any variety
- 4–6 cloves garlic, peeled (crushed or sliced)
- 1/4 cup extra virgin olive oil
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, freshly ground, or to taste
- 1/4 tsp red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Optional: 2 tbsp dry white wine, 1 tsp balsamic glaze, pinch of sugar (for balancing acidity)
Instructions
- Preheat oven to 400°F (200°C).
- Spread cherry tomatoes and garlic on a large baking sheet.
- Drizzle with olive oil, sprinkle with salt, pepper, and optional red pepper flakes. Toss to coat.
- Roast for 25-35 minutes, until tomatoes burst and caramelize and garlic is golden.
- For chunky sauce, crush tomatoes and garlic with a potato masher in the pan. For smooth, transfer to a blender with pan juices and pulse to desired consistency.
- Stir in fresh basil. Taste and adjust seasonings as needed. If using, stir in white wine (simmer briefly) or balsamic glaze.
- Serve warm over pasta or your favorite accompaniment.
