Ingredients

  • 2 lbs (approx. 900g) cherry tomatoes, any variety
  • 46 cloves garlic, peeled (crushed or sliced)
  • 1/4 cup extra virgin olive oil
  • 1 tsp sea salt, or to taste
  • 1/2 tsp black pepper, freshly ground, or to taste
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/2 cup fresh basil leaves, roughly chopped or torn
  • Optional: 2 tbsp dry white wine, 1 tsp balsamic glaze, pinch of sugar (for balancing acidity)

Instructions

  • Preheat oven to 400°F (200°C).
  • Spread cherry tomatoes and garlic on a large baking sheet.
  • Drizzle with olive oil, sprinkle with salt, pepper, and optional red pepper flakes. Toss to coat.
