This vibrant and easy cherry tomato spaghetti sauce is bursting with fresh flavor and comes together in under 30 minutes. It’s the perfect quick and delicious weeknight meal solution.
Ingredients
- 1.5 lbs (about 4 cups) cherry tomatoes, whole
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt and freshly ground black pepper to taste
Instructions
- 1. Wash cherry tomatoes and mince garlic. Roughly chop or tear fresh basil.
- 2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
- 3. Add whole cherry tomatoes, salt, and pepper to the skillet. Stir to coat. Bring to a gentle simmer, then cover and cook on medium-low for 15-20 minutes, or until tomatoes have softened and burst. Stir occasionally.
- 4. Use the back of a spoon or potato masher to gently mash any remaining whole tomatoes for a rustic texture. Taste and adjust seasoning as needed.
- 5. Remove from heat and stir in the fresh basil. Serve immediately over your favorite pasta.
