Ingredients
- 2 pints (approx. 20–24 oz) cherry or grape tomatoes
- 2 tbsp extra virgin olive oil
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 1/4 cup dry white wine (optional)
- 1/2 tsp dried oregano (optional)
- Pinch red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 1 tsp balsamic vinegar (optional)
- 1/2 cup fresh basil leaves, chopped
- Parmesan cheese, for serving (optional)
Instructions
- 1. Prep Ingredients: Wash tomatoes. Dice onion and mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 min). Add garlic (and red pepper flakes, oregano if using) and cook for 1 minute until fragrant.
- 3. Add Tomatoes & Simmer: Add whole cherry tomatoes (and white wine if using). Season with salt and pepper. Cover and simmer over medium-low heat for 15-20 minutes, stirring occasionally, until tomatoes are soft and burst.
- 4. Mash & Season: Uncover and gently mash tomatoes with the back of a spoon to desired consistency. Taste and adjust seasoning. Stir in balsamic vinegar if using.
- 5. Finish with Herbs: Remove from heat and stir in fresh basil. Serve immediately over your favorite pasta, optionally with Parmesan.
