- 2 pints (about 4 cups) cherry tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil leaves, chopped or torn
- 1 teaspoon sea salt, or to taste
- 1/2 teaspoon black pepper, freshly ground, or to taste

- Freshly grated Parmesan cheese, for serving
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant, being careful not to burn.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Stir to coat. Cover and reduce heat to medium-low. Simmer for 15-20 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Mash and Finish: Uncover the skillet. Use the back of a wooden spoon or a potato masher to gently crush the tomatoes to your desired consistency. Stir in fresh basil. Taste and adjust seasoning as needed.
