Ingredients
- 2 pints (approx. 20–24 oz) cherry or grape tomatoes
- 3 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 4–5 cloves garlic, thinly sliced or minced
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh basil leaves, chopped
- 1 tsp fresh oregano, chopped (or 1/2 tsp dried)
- 1 tsp sea salt, plus more to taste
- 1/2 tsp black pepper, freshly ground, plus more to taste
Instructions
- 1. Prep Ingredients: Wash tomatoes. Dice onion, mince garlic. Chop basil and oregano.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion; cook until translucent (5-7 mins). Add garlic and red pepper flakes; cook 1 minute until fragrant.
- 3. Add Tomatoes & Cook: Add whole cherry tomatoes, salt, and pepper. Cover skillet; cook 8-10 minutes until tomatoes soften and begin to burst.
- 4. Simmer & Burst: Uncover. Gently press tomatoes to burst any remaining. Simmer uncovered for 10-15 minutes, stirring occasionally, until sauce slightly thickens.
- 5. Finish with Herbs: Remove from heat. Stir in fresh basil and oregano.
- 6. Adjust Seasoning: Taste and adjust salt and pepper as needed. Serve immediately over pasta.
