Ingredients
- 1.5 lbs fresh cherry tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil, chopped
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 1/4 tsp red pepper flakes (optional, to taste)
- 12 oz spaghetti or pasta of choice
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- Wash cherry tomatoes and mince garlic.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden. Be careful not to burn.
- Add cherry tomatoes to the skillet along with salt, pepper, and red pepper flakes (if using). Stir to combine.
- Increase heat to medium-high and cook for 10-15 minutes, stirring occasionally, until tomatoes burst and release their juices. Gently crush any remaining whole tomatoes with a spoon or masher.
- While the sauce simmers, cook spaghetti according to package directions until al dente.
- Reduce heat to low and stir in fresh chopped basil into the sauce. Taste and adjust seasonings as needed.
- Drain the cooked spaghetti, reserving about 1/2 cup of pasta water. Add the spaghetti directly to the sauce in the skillet. Toss to coat, adding a splash of reserved pasta water if the sauce is too thick.
- Serve immediately, garnished with extra fresh basil or grated Parmesan cheese, if desired.
