Ingredients
- 1 pint (about 2 cups) fresh cherry or grape tomatoes
- 4–6 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/4 – 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt to taste
- Freshly ground black pepper to taste
- 8 ounces spaghetti or your favorite pasta
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Mince garlic. Have basil ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant; do not brown.
- 3. Cook Tomatoes: Increase heat to medium. Add cherry tomatoes to the pan. Cook for 8-12 minutes, stirring occasionally, until most tomatoes have burst and softened.
- 4. Mash Tomatoes: Gently mash the burst tomatoes with a fork or potato masher to create your desired sauce consistency.
- 5. Season and Serve: Remove from heat. Stir in fresh basil, salt, and black pepper to taste. Toss immediately with cooked spaghetti and serve warm.
