Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, minced or thinly sliced
- 1/2 teaspoon red pepper flakes (or more, to taste)
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Salt to taste
- Freshly ground black pepper to taste
- Optional: 1 tbsp dry white wine or balsamic glaze
- Optional: 1 Parmesan rind
Instructions
- 1. Wash and halve all cherry tomatoes.
- 2. In a large skillet or Dutch oven, heat olive oil over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant and translucent. Do not brown.
- 3. Add halved cherry tomatoes to the skillet. Season generously with salt and pepper. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until tomatoes soften and burst. Gently mash any unburst tomatoes with a spoon.
- 4. Reduce heat to low. Simmer gently for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly. If using, add wine/balsamic or a Parmesan rind during the last 5 minutes.
- 5. Remove from heat. Stir in fresh basil leaves. Taste and adjust seasoning as needed. Serve immediately with your favorite pasta.
